Ive been a huge fan of Okapi desserts for awhile now, but I just had the chance to try their delicious enchiladas. Wow! As someone who is allergic to dairy, usually enchiladas are not an option for me. These were amazing -- so flavourful, especially the sauce! I love tex-mex and this totally hit the spot. Look forward to another pop-up soon!
